做法:将罗非鱼宰杀剖腹洗净,两侧各划数刀,置于汤盘或大碗中,上面放上各种配料,上锅蒸约15分钟即可。吃时以蘸姜醋最好。

配料:雪里蕻、肥猪肉、红干椒、葱段、蒜瓣、姜片、花生油、酱油、料酒、醋、白糖、味精

做法:将鱼宰杀洗净,雪里蕻切成小段、肥猪肉切丁、红干椒破为三段。然后,锅中放油加热至八成热时,放入鱼,煎至两面黄色取出。将肥肉丁放锅内煸炒,加入各种配料(雪里蕻另放),略炒后少加一点水,然后放入煎好的鱼,上面盖上雪里蕻,用文火靠至汤汁很少,即可出锅。
