(转贴)开屏辣蒸挲鱼
仿照小苑子的开屏武昌鱼,把打理好的鲜小挲鱼也切片平铺在盘子里蒸.鲜嫩又营养,天降大雪,就多放些辣子.

先去砂: 用开水烫皮再用布抹去鱼皮和砂,切成大块备用.

盘子里可以先铺一点姜丝和葱白丝. 取鱼中间的几大块, 切鱼片,一侧稍微不要切断,象开屏状铺在盘子里围成一圈. 姜丝, 葱白丝, 小红辣椒,加料酒和盐搅拌, 撒在铺好的鱼上,腌一下.'P!Zi(}i;EA
