买了八个块头特大的活海螺,鲜美爽脆自然不在话下,贪那杯中物的人更是不容错过。

做法:半锅水加姜片/葱段/料酒烧开,放进海螺烫煮4-5分钟,捞起后马上泡进冰水五分钟,用小叉剔出肉,去除中段的黄/绿色肠肚。肉切片摆盘,尾部回锅再烫3-4分钟后捞起摆盘。撒上葱丝/嫩姜丝,淋上生抽一大匙,白胡椒粉少许,泼上两大匙滚油即可。火侯掌握恰当,螺肉柔软爽脆,味道清甜滋美! /F `CKz

材料 :海螺如上面的做法烫过切片,蒜白切丝,嫩姜切片,椰花菜梗切片。 C!s^c:U%D

做法 :两大匙油烧热,放进嫩姜/蒜丝/椰花菜梗拌炒片刻,转旺火,放进螺片和所有调味料,快速拌炒30秒即可。这道菜注重火侯/镬气,味道鲜香,也是下酒佳肴。这次佐以绍兴酒,爽!
