泰式塔香鸡肉沙拉

3 ?- ~* {  S, Q& ?1/2 Chicken Breast Fillets,200g (1/2 边鸡胸肉) 6 k8 E# j) b0 j2 t8 y
1 Teaspoon Light Soy Sauce (1 小匙酱油)
: ^1 T" R( ?$ J' i. F1/2 Tablespoon Cooking Wine (1/2 汤匙花雕酒) # ]: U; q+ P7 E5 t' x
1 Teaspoon Cornstarch(1 小匙玉米粉)
  t4 F0 u' }) z  WSome Pepper(少许胡椒粉)
! _& e# Z: N) G! \4 ^, L+ P2 Tablespoon Sweet Potato Flour (2 汤匙地瓜粉) ) l9 d* {" y0 w+ r
1 Tablespoon Cornstarch (1 汤匙玉米粉) 6 j0 |* o3 m& u- J$ V6 ^# p

9 H# W# ^  C% m3 X1 oMethods:
# D9 |$ \7 E$ ~) l! R7 dWash and cut chicken fillet into 2cm wide strips then marinate with Soy Sauce, Cooking Wine, Cornfstarch and Pepper for at least 30 minutes or more. ' ?' R- v' s: c! B; t1 B- W
将鸡胸肉洗净, 切2cm 宽条状, 然后加入酱油, 花雕酒, 玉米粉和胡椒粉调味至少30 分钟以上.
" g8 ~% ^( Z2 m& N! x. LCoat the marinated chicken with the flour mixture(sweet potato flour + cornstarch) and set aside for 5 minutes before deep-frying.
3 R6 a  b* j7 ?5 t! u" M7 g; ?将腌好的鸡肉条沾混合好的地瓜粉和玉米粉, 然后放在一边等5分钟后才炸.( 这能防止粉从鸡肉上滑落)
* d! B$ L6 T& t  Q/ U6 p9 R  mHeat up half pot of oil and deep-fry the chicken strips in two batches until golden brown, drain and set side.   H' x. ]# c! H/ P2 v  H
热半锅油, 把鸡肉条分成俩次炸成金黄色后, 捞起放在吸油纸上吸干油分.

2 Cloves Garlic, grated (2 颗蒜, 切末) . \; }4 L" I6 y% m
2 Small chilli, finely chopped (2 颗小辣椒, 切末)
+ @" t( R) r1 b- y( A- n, f: t' l8 Thai Basil Leaves, finely chopped (8 叶九层塔, 切末)
9 l! f6 I, {, ?- o) J2 z! Z1 Teaspoon Chopped Spring Onion(1 小匙葱花) : D. i; ]  m! U# q/ c
2 Tablespoons Thai Sweet Chilli Sauce (2 汤匙泰式甜辣椒酱)
2 g* x( }& u/ p) X* k( h7 m9 ?$ @. ?1.5 Tablespoon Lemon Juice (1.5 汤匙柠檬汁)
3 A8 s9 b0 \; K' \. }, z  P1 Tablespoon Thai Fish Sauce (1 汤匙鱼露) ( O) K; s0 o* Q1 T! R- i4 G+ {
1/2 Teaspoon Sugar (1 /2 小匙糖)
9 p9 q$ i/ h. _# ~: l4 K: e1 Tablespoon Drinking Water (1 汤匙食水) $ {; c* c7 G! R: ~( h% T8 t0 D% N; Q
# ^, X4 p: a& k1 E& n. z- Z1 x, X
Methods: # t* N/ o" P9 h
Mix all the sauce ingredients together in a small bowl and set aside for later used. . ^* `( C% a( |
把全部酱料的材料放在一个小碗里搅拌均匀, 待用.( 如果您不会吃太辣, 就不要放小辣椒或只放一颗) ) y6 s' D  {0 C# i: }6 i: v

Salad Base: (optional)   b  X/ E* A, W2 e3 u
1 Red Apple, shredded (1 个萍果, 切丝) - y) ]! B: u; N% \" i7 Q0 V9 m( y
1 Japanese Cucumber, shredded (1 条日本小黄瓜, 切丝)
5 A3 L1 A7 s7 W* \, I1 Small Carrot, shredded (1条小胡萝卜, 切丝)
: P2 @- v$ }; B# P6 Cherry Tomato, halves (6颗小番茄, 切半) + n8 Z  ^; ?- z( b& G
6 Lychee, remove seeds (6颗荔枝, 拨壳, 去种子) % E) X7 ]4 P2 h" e) P! [6 M2 I. ~

- H; R1 Z7 K( zMix all the above ingredients in a mixing bowl then set aside in the fridge until serve. 4 a; D& C0 o. _# H; {
把全部的沙拉材料放在一个碗里搅拌均匀, 放进冰箱待用. 8 s' `7 x& P1 p
You can used any other fruits or vegetables that you prefer or in season.

Place salad mixture on a serving plate, top with half of the fried chicken strips then drizzle some chilli sauce over the chicken and salad.
. ~; L) n4 P$ x1 _# V4 `  x首先把拌均匀的冷沙拉扑在大盘上, 然后放一般的炸鸡肉条, 接着均匀的淋上些辣椒酱.
6 s$ R* C0 w7 A8 rContinue topping the rest of the chicken and drizzle the rest of the sauce around it. 4 h- v  G( ]4 x7 I9 O
之后继续放上剩余的鸡肉条, 再淋上些辣椒酱.

Notes:
. [* D: H2 J; G7 y9 M- _3 _$ N, z' W' FYou might not need all the sauce, so add the amount that you prefer. Or you can serve it as dipping sauce for the chicken strips without the salad.
